I have an entity called "Cases". I tried to set a new "Email Sending Rules" for changes made to the record. I have many fields in the entity, but only one field is given as a choice in the email sending rules. I have attached screenshots of the fields and limited choices.
Email Sending Rules is found in the "extra" menu.
When setting up the rule, only one choice is presented.
The Entity has many choices. One of them is the "Incident Type", which is the only option for changed fields in mail sending rules. The titles of the entity fields are not blank. I cropped them out for privacy purposes.

It's not supported to create rule for input field.
You can create rule for dropdown fields which is allows you select value for rule.
